- 2 cups flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp nutmeg
- 2 tsp cinnamon
- 4 eggs
- 1 cup cooking oil
- 1/2 cup milk
- 3/4 cup white sugar
- 3/4 cup muscovado brown sugar
- 2 tsp vanilla
- 3 cups coarsely grated carrots
- 1 cup chopped pecan nuts
For the Cream Cheese Frosting:
- 230 grams cream cheese
- 1/2 cup butter
- 2 cups icing sugar
- 1 tsp vanilla
Instructions
For the Cake:
- Cream eggs and sugar together.
- Add milk and oil.
- Add vanilla and mix.
- Sift dry ingredients together, including spices.
- Mix into fluids gradually.
- Mix in carrots.
- Mix in nuts.
- Bake for 35 minutes at 180°C (350ºF).
For the Cream Cheese Frosting:
- Mix cream cheese, butter, icing sugar, and vanilla together until smooth.
- Spread between the two layers of the cake, on top, and on the sides.
- Garnish with nuts and ornamental carrots.
